The word charcuterie comes from the French chair cuite, meaning “cooked flesh.” In France, a charcuterie is the shop where cured and prepared meats — like sausages, pâtés, terrines, and hams — are sold. It’s distinct from the boucherie, which deals in fresh cuts of meat. You’ll often find the two shops side-by-side, each a master of their craft.
